CHICKEN SAUSAGE, SQUASH, & RED PEPPER ONE PAN MEAL

With school back in session for many of us (or our kids), and the holidays just around the corner, I’m happy for any meal that’s ready in a jiff. This is also a perfect lunch prep option!

Serve it over rice, cauliflower rice (to keep it Paleo), or inside of tacos.

CHICKEN SAUSAGE, SQUASH, & RED PEPPER ONE PAN MEAL

INGREDIENTS:

  • 1 package apple chicken sausage (I like Aidell’s or Coleman)

  • 2-3 squashes, I used 1 giant yellow squash, and 1 mini zucchini

  • 1 red bell pepper

  • avocado oil

  • salt, pepper, garlic powder, dehydrated onions, paprika

DIRECTIONS:

Preheat oven to 425. Cut veggies and sausages and evenly distribute so everything is flat. Brush with avocado oil, season with salt, pepper, and other seasonings to taste. I just generously sprinkled all of them over top.

Roast for 30-45 minutes, toss after 20 minutes.
